I love pasta. And cheese. So naturally, baked ziti is right up my alley. I had wanted to try this recipe since the day I saw it on Can You Stay For Dinner? in my days of endlessly looking at food blogs. Now I have enough recipes to last a year so the search has subsided… For now.
Recipe (Straight from Can You Stay for Dinner?)
4 cups cooked pasta, penne or ziti
1 cup part skim ricotta cheese
2 cups marinara sauce, preferably homemade (recipe on her website)
1 cup grated mozzarella cheese, divided
1/2 cup grated parmesan cheese, divided
Preheat the oven to 350 degrees F. In a large mixing bowl, combine the cooked pasta, ricotta, marinara sauce, 1/2 cup mozzarella cheese, and 1/4 cup parmesan cheese. Stir to mix well. Pour into a greased casserole dish, or individual ramekins, and sprinkle evenly with the remaining 1/2 cup mozzarella and 1/4 cup parmesan. Bake for 15 -20 minutes, until the cheese has melted. Best when eaten immediately.
I made it in an 8 inch bread pan and it was pushing capacity, but it still turned out really well. The foil is there because I wasn’t sure it would all fit and wanted an easy way to transfer out the first batch without losing any ziti goodness.
